Cook Time: 10 minutes

Ingredients

  • 2 tablespoons (30ml) sesame oil
  • 2-3 inches (5-7.5cm) ginger knob, peeled and cut into thin strips
  • 12 oz (350g) chicken, cut into pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or Chinese rice wine)
  • 1/2 cup (120ml) water
  • 3 dashes ground white pepper

Notes

  • Heat sesame oil before adding ginger to release fragrance.
  • Use plenty of ginger for better flavor.
  • Cook chicken in batches if using a smaller pan for proper searing.
  • Simmer on low heat for tender, juicy chicken.

Instructions

  1. Marinate the chicken in with 1 tbps of sesame oil and 1 tbps of soy sauce with some water.

  2. Heat a skillet or wok over high heat and add sesame oil. Once hot, add ginger strips and stir-fry until light brown and aromatic.

  3. Add chicken and stir-fry for 10-15 seconds, then add soy sauce, Shaoxing wine, and ground white pepper.

  4. Add water, stir quickly, cover the skillet or wok, and reduce heat to low. Let simmer for 15 minutes, or until sauce thickens and chicken is tender.

  5. Dish out and serve immediately.
