Masa's Stewed Ribs and Potato
A hearty stew with tender spare ribs and potatoes

Blanch snap peas, then blanch spare ribs and rinse them thoroughly.

Slice the onion, potato, carrots, and snow peas into appropriate sizes.

Soak the sliced potatoes in water to remove excess starch.

Heat oil in a pan over medium heat and sautΓ© the onion and carrot until fragrant.

Add the spare ribs to the pan and fry until golden brown.

Pour in the dashi, sugar, soy sauce, and oyster sauce. Stir well to combine.

Simmer on low heat, covered, for 30 minutes.

Add the potatoes to the pot and continue simmering for 20 minutes.

Remove the potatoes and cook the stew on high heat until the sauce reaches your desired thickness.

Add the snow peas at the end of cooking and serve hot.
