Gemma's Best-Ever Oatmeal Cookies
Chewy, tasty oatmeal cookies made with rolled oats, raisins, brown sugar, and cinnamon.
Instructions
-
Preheat the oven to 375°F (190°C). Line two large cookie sheets with parchment paper and set aside.
-
In a medium bowl, combine the flour, cinnamon, baking soda, and salt. Set aside.
-
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla, then whip until combined.
-
Add the dry ingredients to the wet ingredients and mix with a spatula until the flour is just absorbed. Do not overmix.
-
Fold in the rolled oats and raisins.
-
Using a tablespoon measure, scoop heaped tablespoons of dough onto the lined cookie sheets, leaving about 2 inches between cookies.
-
Bake for 9 to 10 minutes, until the cookies are golden brown and slightly risen. Avoid overbaking so the centers stay gooey.
-
Let the cookies cool slightly on the tray, then transfer to a wire rack to cool fully before serving.
