Gemma's Best-Ever Oatmeal Cookies

Chewy, tasty oatmeal cookies made with rolled oats, raisins, brown sugar, and cinnamon.

Ingredients

  • 3/4 cup (105g) all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (115g) butter, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (85g) light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (128g) rolled oats
  • 2/3 cup (94g) raisins

Notes

  • Store in an airtight container for up to 3 days at room temperature.
  • Raisins can be swapped for chocolate chips or dried cranberries if you prefer.

Instructions

  1. Preheat the oven to 375°F (190°C). Line two large cookie sheets with parchment paper and set aside.

  2. In a medium bowl, combine the flour, cinnamon, baking soda, and salt. Set aside.

  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla, then whip until combined.

  4. Add the dry ingredients to the wet ingredients and mix with a spatula until the flour is just absorbed. Do not overmix.

  5. Fold in the rolled oats and raisins.

  6. Using a tablespoon measure, scoop heaped tablespoons of dough onto the lined cookie sheets, leaving about 2 inches between cookies.

  7. Bake for 9 to 10 minutes, until the cookies are golden brown and slightly risen. Avoid overbaking so the centers stay gooey.

  8. Let the cookies cool slightly on the tray, then transfer to a wire rack to cool fully before serving.
