High Protein Peanut Pasta

Creamy Thai-inspired peanut pasta with Greek yogurt, perfect for high-protein meal prep. Recipe from Lennard Yeong.

Ingredients

  • 200g Greek yogurt
  • 2 tablespoons smooth peanut butter
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon palm sugar or brown sugar
  • 1 garlic clove, grated
  • 1 small chili, finely minced
  • 250g Brown Rice Fusilli (Naturel Organic)
  • Salt to taste
  • Pasta water (as needed to thin sauce)
  • Cooked protein or vegetables (see notes)
  • Roasted peanuts, for garnish
  • Thai basil, for garnish

Notes

  • If sauce is too thick, add a splash of pasta water to thin it out.
  • Cook pasta in lightly salted water, drain, and toss directly into the sauce while still hot.

Instructions

  1. Make the sauce: Combine Greek yogurt, peanut butter, lime juice, fish sauce, palm sugar, grated garlic, and minced chili in a bowl. Stir until smooth.

  2. Cook the pasta: Cook Brown Rice Fusilli in lightly salted water according to package directions. Drain, reserving some pasta water.

  3. Combine: Toss the hot drained pasta directly into the sauce. Add a splash of pasta water if needed to reach your desired consistency. Season with salt to taste.

  4. Add toppings: Fold in your choice of cooked protein and/or vegetables. Popular options include air-fried kale, cherry tomatoes, chicken breast, edamame, bell peppers, asparagus, broccoli, cauliflower, or shrimp.

  5. Serve: Garnish with roasted peanuts and fresh Thai basil. Serve immediately or store for meal prep.
